Semarang │(August 23, 2017) Universitas Muhammadiyah Semarang (Unimus) have had new doctors in food science just recently. They are Dr. Yunan Kholifatuddin Sya’di, S.TP., M.Sc., a lecturer of Nutrition Science program (an undergraduate program) and Dr. Siti Aminah, S.TP., M.Sc., a lecturer of Food Technology program (an undergraduate program). Both of the new doctors have graduated from Food Science program, Faculty of Agriculture, Universitas Gajah Mada.

Dr. Yunan Kholifatuddin Sya’di finished his doctoral study after accomplishing his research entitled “Bacterial Cellulose Production by Gluconacetobacter Xylinus: Influence of the condition of Fermentation and Media on the Physical Properties”. Dr. Yunan stated that results of his dissertation showed that by adding starch, jelly, and alginate, the crystallinity index decreased; meanwhile a 7-day-long fermentation also decreased the crystallinity index. “Crystallinity index resulted in a looser morphological change. decrease of tensile strength, and increases of WHC and rehydration ratio. Everyday practices of giving starch, jelly, and alginate could grow Gluconacetobacter xylinus and would make the textures of food produces softer,” he added.

Meanwhile, Dr. Siti Aminah completed his doctoral study after finishing her dissertation entitled “The Potency of the Use of Elicited Sprout Flour to Prevent Osteoporosis in ovariectomized Mice”. Dr. Siti Aminah revealed about her findings, saying that elicitation using NaCl 0.9% in the germination process of soybeans improve the substantial component that could prevent osteoporosis. “By consuming elicited soybean sprouts, osteoporosis can be prevented signified by the bone turneover balance in ovareactomized mice. It means that food products or supplements made of elicited sprout flour has the potency to prevent osteoporosis” Dr. Siti Aminah added.

The presence of lecturers with doctoral qualifications (S-3) is so needed by the university in order to enhance the quality of the Three Obligations (Tri Dharma Perguruan Tinggi). Efforts have been done by Unimus to have as those lecturers as many as possible in order to strengthen the institution. More doctors at Unimus will result in more scientific works and community service programs. With many more scientific works, it is hoped that the number of scientific publications will also increase, such as in international or accredited national journals. Improvement of the lecturers’ educational backgrounds may contribute towards the quality enhancements of the learning processes provided to the students.
